What We Do
Ronni Alicea is a registered dietitian and proprietor of Food and Nutrition Challenges, LLC, a consulting company that provides full service nutrition counsel, strategic planning, tactical marketing support and professional/consumer relationship management for gluten- and allergen-free food manufacturers. Ms. Alicea also maintains a private practice specializing in Celiac Disease, food allergy and food intolerance.
Ms. Alicea brings a wealth of knowledge to every patient or corporate meeting. She is a sought-after resource in the gluten- and allergen-free world and frequently speaks to both professional and national advocacy groups. Her current favorite project is educating Dietitians and Food Service Directors about ways to improve the safety and quality of food for those who need short-term or long-term health care.
Our Qualifications
Prior to her involvement with food allergies and intolerances, Ronni’s experience included clinical institutional health care, Director of Dietary for a busy LTC/Sub-Acute center, and outpatient counseling. Ms. Alicea earned a BS in Human Foods and Nutrition from Rutgers University and an MBA from Seton Hall University. She is a member of the American Dietetic Association, Consultants Dietitian in Healthcare Facilities, Nutrition Entrepreneurs, Dietitians in Complementary Care and Dietitians in Gluten Intolerant Diseases. She has been working in the nutrition field for over 25 years.
